I just ordered Pamela's baking mix and bread mix the other day and it just showed up yesterday and all 6 bags in two separate boxes had two small puncture holes in all the bags in the same spot. The holes had to have been made at Pamela's packaging warehouse because they were packaged in Pamela's shipping boxes. I called amazon and reported it to them and they were very nice and refunded my money.I would have given this product a five star but for the packaging issue from Pamela's i gave it three stars.

Can't make a meat sandwich out of it because it is so sweet! Try Gluten Free Pantry Favorite Sandwich or French Bread & Pizza Mix, they taste like real bread! Like I said, it's sweet and has an overpowering flavor that ruins anything you try to do with it.

It wasn't until after I purchased it that I even noticed it was what-free and gluten-free.

Well, let me just tell you, at least for pancakes, this stuff is NO Bisquick. Bisquick still beats Pamela's by a country mile (or six). I cannot fathom how other reviewers there likened this to Bisquick or even better than Bisquick. NO WAY, NO HOW!

Now, the pancakes were certainly not BAD--and I could see how if your diet required you to eat wheat- or gluten-free, then the pancakes were probably even good. But to say they were better than Bisquick? Never. Bisquick pancakes cook up light and fluffy; Pamela's pancakes were too moist and dense and flat and didn't even cook like regular pancakes (they don't bubble up like normal pancake batter, so we were a bit confused how to cook them). We even tried a few different cooking methods (temperatures) and none came out any better.

Can you tell I'm a Bisquick girl? :) Here, let me get it out of my system: Bisquick Bisquick Bisquick Bisquick Bisquick Bisquick Bisquick Bisquick Bisquick Bisquick Bisquick Bisquick Bisquick Bisquick Bisquick.

The bag says "Makes waffles, scones, muffins, loaf cakes, cookies, biscuits, coffee cake, and more" and there are recipes on the package for all of those, including a banana loaf cake, pumpkin loaf cake with nut topping, sour cream coffee cake, zucchini loaf cake, chocolate chip cookies, and (I kid you not) Bisquick-Type Drop Biscuits. :)

I did make a batch of chocolate chip cookies with the mix and those were good--they didn't taste any different than regular cookies made with flour. But for the regular person (i.e. you don't NEED this type of product) then it's certainly more expensive than flour. I am definitely going to try a few of the other suggested recipes to use up the rest because we certainly aren't going to make pancakes with it.

It is costly: $40 for three (3) 64oz bags (or $13.33 per bag). If you sign up for the "Subscribe & Save" it drops to $34, or $11.33/bag or 17c/oz. That sounded like a good deal at first, but a 64oz bag isn't nearly as big as I thought it was. Compared to (are you ready?) Bisquick, which I can get a 96oz box at Costco for about $9 or 9c/oz...it's almost double the price. So unless you NEED this, I wouldn't buy it.

I am giving the mix three stars out of five. If I needed the gluten-free aspect I would probably rate it much higher (at least 4 stars, if not 5). But as just your Average Joe looking for a pancake mix to replace Bisquick...or something to replace flour, I'd give this three stars and advise you to stick with Bisquick (or whatever product you currently use that you like).

The bad thing is that it is pretty blah in taste unless you add a bunch of other ingredients. But if I'm going to add a bunch of ingredients then I might as well do everything from scratch with more nutritious flour.

And the chocolate chip recipe on the bag is to die for. My friends love it and always request that I make them for events. You can use this mix just as you would use bisquick, it is very versatile. We recently made peanut butter cookies and my non-celiac friends liked these far better than peanut butter cookies made with regular flour. The cookies had a great texture and flavor. The mix also makes wonderful biscuits, pizza crust, pie crust and more. We highly recommend this mix.

Here is our recipe for awesome peanut butter cookies:

1 Cup Unsalted Butter (room temp)
1 Cup Peanut Butter
1/2 C Organic Cane Sugar
1/2 C Organic Brown Sugar
2 Eggs (room temp)
2 Cups Pamela's Baking Mix

Preheat oven to 375 degrees
Cream together the following: butter, cane and brown sugar and eggs.

Mix in peanut butter.

Mix in baking mix.

Refrigerate for 20 minutes (this is optional but will make it easier to place criss-crosses on the cookies)

Use a cookie scoop to scoop dough onto lightly greased cookie sheets, then gently mash in a criss-cross pattern with a fork.

Bake cookies in a preheated 375 degree oven for 9 - 12 minutes.

* Use 9 minutes if you did not refrigerate the dough. Use 12 minutes if the dough is cold. *

Allow the cookies to sit on cookie sheet for about 10 minutes before moving to a cooling rack. They will appear a little soft when they come out of the oven but will set up as they sit.

Pamela's baking mix contains: brown rice flour, white rice flour, cultured buttermilk, natural almond meal, tapioca starch, sweet rice flour, potato starch, grainless & aluminum-free baking powder, baking soda, sea salt and xanthan gum.

Each 1/3 cup of mix provides 160 calories, 3.5 grams fat (zero trans fat), 5 mg cholesterol, 390mg sodium, 27 grams carbs, 1.5 g fiber, 3 g sugar, 4 grams protein, 10% calcium and 2% iron.

260475260475B000NMJWZOA3TZINKVL850NLJulie2251270771200Pamela's GF Baking Mix Recipe IdeasAfter making plain biscuits, which were the best I tasted since going gluten free, I came up with a few recipes. My husband has no allergies but will eat any of these.

#1-- Herb Biscuits - When making a double batch of biscuits (10-12), I add 1 TBSP. each of garlic powder, onion powder, chives, and parsley. (find the amount that suits you best) I also like to add a packet of Chreese (GF Dairy Free cheese sauce mix) While I still miss Red Lobster's biscuits, these are quite tasty.

#2-- Shortcake - Use vanilla flavored soy or almond milk and add a little sweetener of choice to your biscuit mix. Top with your favorite fresh or frozen fruit.

#3-- Chicken Pot Pie - Prepare biscuit mix with a little extra milk or broth, two cans cream soup, a cup of frozen veggies and leftover boneless chicken chunks. Bake at 350 degrees in a pie pan until done (about 30 minutes)

I mostly use it for muffins, bread and pancakes. I don't use sugar so I substitute a mixture of coconut oil and agave nectar for the honey and then add bananas, blueberries or other ingredients to get a variety. I freeze my muffins within a day because they get stale easily, but the bread seems to be ok left out or in the fridge. For pancakes, experiment a bit because the mix will be different than regular pancake mixes, usually a little more water is needed. I've also used it as a batter for frying and mixed with oatmeal for apple crisp. Enjoy!!

Before I was diagnosed I took great joy in baking healthy whole-grain treats frugally from scratch and loved the nutty fullness that my breads and treats had.

Once I cut out the gluten I continued to enjoy some of the other grains out there, like rice, quinoa, corn, and millet. I have missed bread and pancakes, especially, however, as those were key parts to some of my favorite breakfasts. At a recommendation I picked up a packet of this mix to try, skeptical of the gummy or crumbly nasty tasting pancakes I might have to be drenching with syrup just to swallow.

As we mixed up the pancakes according to directions, I could tell that this was going to be something special. It had little flecks from the almond meal that pleasantly reminded me of some of my successful whole grain pancakes (not tough dense things that some people consider food). The texture was smooth and silky. As they cooked, there was not the slimy looking top that the previously gummy pancakes had. They were a little different from wheat pancakes, but still looked amazingly good. There was very nice browning on the bottom after we flipped them over. When they were done, they looked like pancakes. REAL pancakes.

Topped with a bit of maple syrup, these were such a treat for my poor abused tastebuds. A fluffy texture, a fine grain, not a trace of gummyness to be found - I was in heaven.

As far as I am concerned, my search for a gluten-free baking mix stops here. I have no desire at this point in my life (full-time student, wife and mom to a toddler) to relearn how to bake my favorite foods. This mix is a great value, easy and so delicious - not to mention it is nutritious - that I am happy to save a place in my pantry for it.

I used left over biscuits in a stuffing recipe for Thanksgiving and that was GREAT. I'm still looking for a good bread recipe.

I don't buy any other kind any more because the whole family likes Pamela's so much. I have to triple the recipe because everyone comes along and starts eating them as soon as I get them off the griddle. When there are leftovers, they taste good re-heated but I will often eat a cold one while waiting for the ones in the microwave. They taste so good, I usually don't even use butter on them, just some syrup and a little honey.
There are other recipes on the bag, but so far I have not tried any. After reading some of the other reviews I think I just might try the scones or cookies recipes soon. ;-)
The large 3-bag case is a more economical option than most, though the 6-bag case is priced fair too.
I definitly recommend this product for anyone following the gluten free diet or not!

It is so versatyle and has easy to do recipes on the back and some suggestions for every day cooking.
