4Quick Noodles with 'Whatever'30 Minutes2 packets noodles, 1 Tbsp vegetable oil, 1 cup sliced onions, 1 cup sliced peppers, 1 cup carrot julienne, 1 cup spring onions sliced, 1 cup sliced mushrooms, 1/2 iceberg/romaine lettuce, 1 Tbsp ginger & garlic chilli paste, 1 Tbsp soy sauce, 1 Tbsp schezwan sauce, 1/2 tsp turmeric powder, 1 tsp sugar, 1 Tbsp chopped coriander, 2 Tbsp toasted crushed peanuts, 1 Tbsp lemon juiceCook the noodles in boiling water according to the instructions depending upon the kind of noodles you are using. Drain, cool under running water. Add a few drops of oil to the noodles to prevent them from sticking to each other.In a wok, heat some oil to almost smoking point. 7Chicken Manchurian1 Hour250 gm chicken mince, 2 eggs, slightly beaten, 3/4 cup refined flour, 1/2 tsp garlic paste, 1/2 tsp ginger paste, Oil for deep frying, 2 Tbsp oil, 1 tsp finely chopped garlic, 1/2 cup finely chopped onions, 1 large capsicum-chopped fine, 3 Tbsp corn flour-blended, 1/2 cup water, 2 Tbsp vinegar, 2 tsp salt, 2 tsp soya sauce, 1/2 cup tomato puree, 2 Tbsp chopped celery or 1/4 tsp celery salt, 2 cups waterMix together the chicken, egg, flour, garlic and ginger paste, ajino moto and enough water so as to have a thick batter. Leave this for 5-10 minutes.Heat the oil, keeping the heat high drop heaped teaspoonfuls of batter and fry to a golden brown. Drain on absorbent paper till required. Heat 2 Tbsp of oil, and stir-fry the garlic and onion in it over high heat, till the onions look glossy. Add the capsicum and turn around a few times. Transfer fish into a serving plate.For the sauce:Heat oil in a pan.Saute garlic, ginger and green chilly. Add soy sauce, chilly and tomato sauce to it.Finally add corn flour mixed with water to it and stir well. 9Chicken Cashew Nuts20 Minutes150 gms chicken breast, sliced, 40 gms red capsicum, diced, 40 gms green capsicum, diced, 20 gms onion, 10 gms black mushrooms, 10 gms coral mushrooms, 15 gms whole red chilli, 5 gms garlic, 7 ml fish sauce, 5 ml sugar, 10 ml oyster sauce, 5 ml lemon juice, 2 gms black pepper, 5 ml oil, 20 gms spring onion, 25 gms cashewnuts, 100 gms riped mango, diced, 50 gms tomatoes, Salt, to tasteSoak coral mushrooms till soft, then cut it into small pieces and remove the stem. Soak the black mushroom till soft, then remove the stem and cut it.In a wok add oil. Put chopped garlic and stir till light brown. Add the onions, red capsicum, green capsicum and whole red chilli. Saute lightly.Add chicken slices to it and all the sauces (fish sauce, oyster sauce, lemon juice) and sugar.Add the spring onion, cashewnuts, tomatoes, riped mango, black pepper, black mushrooms and coral mushrooms. 10Tapioca Dumplings45 Minutes1/2 tsp peppercorns, 3-4 cloves of garlic, 1 Tbsp fresh coriander, 1/2 tsp salt, 1 Tbsp oil, 1/2 cup minced shallots, 250 gm minced chicken, 1/2 cup roasted peanuts, 1/4 cup brown sugar, 1 Tbsp fish sauce, 1 cup tapioca pearls (Sabudana), 1/2 cup tapioca flour, 75 ml boiling water, Spinach leaves, Black sesame seeds, Garlic oilFor the filling:In a mortar and pestle, grind the peppercorns, coriander, garlic and salt and form a paste.In a pan, heat oil, fry the paste for about a minute.Then on high heat, add the onions and the chicken, and stir-fry till it's all crumbly. Add the peanuts, brown sugar. Give it a quick stir so that the sugar caramelizes.Add the fish sauce and mix well.Stir for a few minutes more and take off the heat.For the wrapping:For the tapioca shell, mix the tapioca pearls and tapioca flour in boiling water, while stirring constantly. Knead the dough a bit but very gently, do not mash the pearls. It will be sticky and allow it to cool.Dip your fingers in a bowl of cold water. Take a pinch of the tapioca dough, roll into a ball. Then flatten it and fill it with the chicken filling.Steam the dumplings.Optional - you can drizzle a bit of garlic oil on top or black sesame seeds. Also instead of the tapioca covering you can use spinach leaves to wrap the filling. 15Duck Spring Roll40 MinutesSugar syrup, A dash of vinegar, A dash of lemon, 1 carrot, julienne, 2 duck breast pieces, 1 tsp soy, 1/2 tsp ginger, 1/2 tsp salt, Some chopped onions, 1/2 tsp garlic, Sesame oil, Plum sauce, optional, 1 orange, cut into segments, 1/2 cucumber, julienne, 1/2 bell pepper, julienne, 1 spring onion, julienne, 4 rice paper wraps, cooked, 1 orange, juice, 1/2 cup of sugar syrup with vinegar and lime juice, 1 tsp fish sauce, 1 Tbsp lemon juice, 1/2 tsp garlic, 1/4 tsp chilly powder, Coriander leaves, choppedBoil the sugar syrup, vinegar and lemon juice togethar.Pour this over the julienne carrots.Now, cook the duck breast pieces in a pressure cooker with soy, ginger, onions and garlic.Once the meat is cooked, lightly pan fry it with the same ingredients in sesame oil. Here you can throw in your favorites like maybe plum sauce or anything to make it more flavorful and then shred it to cut it firmly.Now the rice paper wraps are already cooked so just soak them in water and then put it out on a damp cloth, nice and smooth.Now top the wrap with some carrots, cucumber, bell peppers, the duck pieces, orange segments, spring onions and wrap up the roll.Now mix all the ingredients to make the sauce. Top it up with some fresh coriander. 26Stir Fried Lamb with Fried Rice30 Minutes1/2 pound (1 cup approx) lamb leg meat, sliced, 1 Tbsp oil, 2 cloves garlic, chopped, 1 red chilli, chopped, 1/2 red bell pepper, diced, 1/2 yellow bell pepper, diced, 2 tsp oyster sauce, 3 tsp fish sauce, 2 tsp soy sauce, 1 tsp sugar, Pepper, to taste, Salt, to taste, 8-10 mint leavesIn a wok add oil, chopped garlic and chilli. 27Steamed Chinese Cabbage Parcels25 Minutes + Time to marinate chicken250 gm chicken mince, 1 egg white, 2 Tbsp spring onion, chopped, 2 Tbsp carrots, chopped, 2 Tbsp mushrooms, chopped, 1/2 tsp chilli garlic paste, 1 Tbsp soya sauce, 1/2 chicken stock cube crumbled, Black pepper and salt, to taste, 1 Tbsp sesame oil, 1 Tbsp ginger, chopped, 1 tsp castor sugar, 2 Tbsp ginger juice, 1 big Chinese cabbage leaves removed and blanched in hot water (molding consistency), Soy and vinegar with ginger slivers and green chillies, Sriracha sauceMix the chicken mince with all ingredients (apart from the cabbage leaves). Marinate for at least 4 hours or overnight.Now take cabbage leaves and put a tablespoon of mince in the center of leaf and tie up with spring onion green stem. Chop the extra stem.Steam well (20 minutes approx.) in a steamer. Serve in a bamboo basket with your favorite sauces. 28Stir Fried Chilli Chicken15 Minutes2-3 Tbsp oil, 4 cloves garlic, chopped, 3-4 red and green chillies, chopped, 1 cup chicken, cut into bite sized uniform pieces, 2 tsp chilli sauce, 4 tsp tomato puree, Soy sauce, a dash, 1 tsp sugar, 7-8 basil leavesIn a pan add oil. Add chopped garlic, chillies. Saute.Add the chopped chicken and let it cook for a minute. Coat the chicken with all the garlic and chillies. Add a little salt in that. 29Vegetables in Plum Sauce30 Minutes2 Tbsp oil, 1 cup onions-sliced thin, 1 tsp garlic paste, 1 red bell pepper, 1 yellow bell pepper, 100 gm baby corn, 1 tsp salt, 2 Tbsp cornflour/cornstarch blended with 1 cup water, 2 Tbsp vinegar, 1 tsp salt, 1 cup plum sauce, 2 tsp chilli sauce, 2 Tbsp celery-chopped fine, 1 cup waterCut the peppers into halves, lengthwise and de-seed and cut off white veins. Shred into thin strips. Slice the baby corn into two, lengthwise. Heat oil in a large pan and add the onions and garlic. Stir till onions are wet (slightly soft), and add baby corn. Add the peppers and continue to stir over high heat till they are mixed well. Add the sauce mixture and bring to a boil. Simmer till sauce looks smooth and serve hot.
